Throughout his 19-year culinary career in Las Vegas, Chef Brian Howard earned his stripes working with some of the most celebrated restaurants, including Bouchon Bistro, Comme Ça, Cathouse and Nu Sanctuary. In 2017, he opened Sparrow + Wolf in the heart of Las Vegas’ vibrant Chinatown, featuring American cookery influenced by the culturally diverse neighborhoods of his travels, classic training and midwestern roots. Focused on balancing the old with the new, cooking in synergy with the seasons and most importantly, getting back to genuine neighborhood hospitality, Sparrow + Wolf brings a new level of culinary diversity to Las Vegas. Since opening, the restaurant has earned critical acclaim from Food & Wine, Forbes Travel Guide, Thrillist, The Daily Meal and more. Howard was named “Chef of the Year” 2018 by Desert Companion and one of Greenspun Media Group’s “40 under 40” honorees. He has competed on Food Network’s “Chopped,” taken the win on FYI Channel’s “Late Night Chef Fight,” and been invited to cook several times at the legendary James Beard House. Howard also takes pride in contributing to the community and recently partnered with brand new Las Vegas Ballpark, home of the Minor League team the Aviators. Dubbed “Flydogs,” his gourmet hot dog and sausage creations are available to guests throughout the park’s main concourse.
